Let’s not even bother with the preamble!
This recipe is everything!! LOL
I’ve used green vegetables, coconut milk and Greek yogurt BUT WAIT, trust me it’s really creamy, spicy and flavourful. Don’t take my word for it. Try it yourself.
INGREDIENTS
(Serves 4 – so great for meal prep)
1 lb chicken (cut into strips or cubes)
2 cups dry pasta
1½ cup coconut or soy milk
1 cup greek yogurt
½ medium onion and ½ medium sweet peppers (red/yellow/green)
2 cups pak choi (finely chopped)
½ cup cheese
1 ½ tbsp butter
½ tsp each of salt, black pepper, chicken seasoning, dry jerk seasoning and all purpose seasoning
2 tbsp wet jerk seasoning
DIRECTIONS
- Season chicken with half of all dry seasonings plus salt and pepper. Set aside
- Boil pasta, drain and set aside
- Melt ½ tbsp butter in pan on medium heat, add chicken, cook for 3-4 mins on each side, then remove from pan
- Add 1 tbsp butter in same pan and cook garlic on low heat
- Add sweet peppers and saute for 3 minutes
- Add pak choi, cover pan and steam for 3 minutes.
- Add milk, then greek yogurt, then seasonings.
- Add cheese, stir and allow to melt (add water at this point, if consistency is too thick)
- Add pasta gradually and mix, then add chicken
